This is a belly warming winter meal that packs a nutritional punch. With Your Own Chicken Stock , free range chicken, peppers, and a bit of spice, this is a perfect winter meal that is packed with nutrients and very easy to prepare. As long as you have Your Own Chicken Stock on hand, this meal only takes about 15 minutes to throw together, and another 20 minutes to simmer. It’s a simple, tasty solution to any weeknight
Southwest Chicken Stew
1 3-4lb chicken (preferably free range from Advantage member Nicole Ivey’s farm ), cooked and pulled.
1 onion, diced
1 carrot, diced
1 red pepper, diced
2 poblano peppers, diced
8oz crushed tomatoes, no salt added
2 cups dry black beans, soaked at least 8 hours
1/2 cup freshly chopped cilantro
Make Your Own Chicken Stock the night before, refrigerate the stock, and pull the chicken from the bones to use in this stew. If that’s not an option, don’t sweat it, you can use the boxed stock (if you are ok settling for that 🙂
When you get up in the morning, soak 2 Cups of Black Beans in enough water to cover them. They will be ready when you are ready to make the stew in the evening.
